Our Colombian coffee is decaffeinated using the CO2 (carbon dioxide) process. In a nutshell: Coffee beans are soaked in water and then placed in an extraction vessel where the caffeine-laden CO2 is then transferred to another container where the pressure change causes the C02 to return to its gaseous state and evaporates, leaving the caffeine behind.
